Cocada (Sweet Coconut Candy)

Ingredients:

- 300 gr of grated coconut
- 250 gr of sugar
- 10 eggs
- grated peel of one lemon
- 125 gr of melted butter
- juice from ½ lemon

1- Whisk very well the sugar with the melted butter, the eggs, the grated lemon peel and the lemon juice.

2- Add the grated coconut and mix without whisking.

3- Grease very well a cake tin and put the batter inside it. Cook it in water bath for 50 minutes in a moderate preheated oven (180°C/ 350°F). Supervise while it's cooking and when it's ready serve cold.
